Sustainability at BREATHE™

So, what exactly is sustainability? The dictionary definition is; avoidance of the depletion of natural resources in order to maintain an ecological balance and Breathe aims to do just that.

The lower ground level, cleverly named Ground, has the mission of sustainability at the forefront using environmentally responsible, sustainable and ethical products. The team carefully select brands that support their beliefs and always ensure there is no use of plastic bottles within the establishment, whether it be out for the customers to see, in the kitchen or behind the bar. KM0 water (purified town supply water put through a process of decalcification, dichlorination, reserve osmosis and UV sterilization) is served throughout the establishment in reusable glass bottles. These processes create top-quality drinking water and also drastically reduce the environmental impact of the water bottling industry, which uses high water and energy consumption and also has negative environmental impacts on the transport industry. You may wish to argue that osmosis is a process that wastes a lot of water, however with modern machinery such as that at Breathe, the waste is reduced to about 50% and in their case, the ‘wasted’ water is diverted to their irrigation tank to be used for the plants.

Breathe aims to avoid purchasing plastic packaging wherever possible, including pressuring suppliers to avoid unnecessary plastic packaging and alternatives are available on request for straws, bags, coffee cups and other packaging. Wherever possible, they substitute plastic products with paper, cardboard, natural materials or plastic alternatives with greatly improved composability, such as PLA (plant-based starch).

The menu at Ground caters for a vast array of dietary requirements including vegetarians, vegan and celiac and can cater for healthy, organic, 100% natural and bio diets without compromising on flavour or being strict to a theme. The chefs follow the farm to table concept avoiding shops, markets and distributors wherever possible, bringing you the freshest, organic produce around. Almost all of the fresh fruit and vegetable products comes from farms in and around Marbella, mostly organic. As a result, the menu changes daily, largely in response to local market availability and seasonality.

Open for breakfast from 8.30am, Ground boasts an impressive selection of speciality coffees thanks to their La Marzocca premium coffee machine as well as luxury organic teas. The fresh, organic bakery produces mouth-watering bakes daily including their famed sourdough bread, all baked in-house with no chemicals or preservatives. If dining at lunch time, choose from the a la carte menu inspired by the latest global trends or their excellent value set lunch menu for 19€ per person including two delicious courses followed by a coffee, tea or chocolate chip cookie! Examples include Vichyssoise of Green Asparagus with Estragon and Tomato Croutons followed by Teriyaki Marinated Salmon served with Roasted Fennel, Miso, Sakeada Orange and Ginger Jasmine Rice or their Buddha Bowl filled with Spiced Sautéed Chickpeas, Roasted Sweet Potato, Dehydrated Kale Chips, Steamed Broccoli, Granny Smith Apple and Red & Yellow Peppers.  All the menus are designed by the Breathe Executive Chef with all dishes carefully prepared in-house. 

Ground may be open 365 days a year but this New Year’s Day they will be offering something a little different, serving a delicious brunch guaranteed to ensure you start 2020 the right way, plus weekend brunches will be arriving soon and with 24/7 public parking facilities what more could you need to make your weekend extra special.
